Lighter Breakfast and Brunch Options at Snooze
Lighter Breakfast and Brunch Options at Snooze
Snooze, an A.M. Eatery has a dedicated Lighter Fare section for mornings when pancakes, biscuits and gravy or a large breakfast burrito are not what you want.
The current menu includes avocado toast, an egg-white scramble, steel-cut oatmeal, a high-protein breakfast bowl and a sweet potato and vegetable breakfast. There are also sides and add-ons that make it possible to adjust other breakfast dishes with vegetables, avocado, tofu or plant-based chorizo.
"Lighter" does not have to mean skipping breakfast. It can simply mean choosing more vegetables, egg whites, oats or a smaller combination of ingredients instead of one of the menu's heavier breakfast plates.
Bravocado Toast
The Bravocado Toast starts with toasted rustic bread topped with smashed avocado, roasted tomato and red onion honey jam.
It is served with two sunny-side up cage-free eggs and greens dressed with Dijon vinaigrette, Parmesan and spiced pepitas.
This is not just plain avocado spread on toast. The eggs add a traditional breakfast component, while the greens and roasted tomato make the plate noticeably different from an egg-and-potatoes breakfast.
It works particularly well for someone who still wants eggs but does not necessarily want hash browns, breakfast meat and toast all on the same plate.
Protein & Veggie Egg White Scramble
The Protein & Veggie Egg White Scramble is the most direct egg-white choice in Snooze's Lighter Fare section.
Cage-free egg whites are scrambled with asparagus, mushrooms, onions, red bell peppers and spinach. The dish is served with avocado, chicken sausage and house-made sambal sauce.
Using egg whites changes the basic structure of the breakfast without eliminating the ingredients that make a scramble filling and flavorful. Vegetables make up a substantial part of the dish, while chicken sausage adds another savory component.
For diners specifically looking for an egg-white breakfast, this is the clearest option on the menu.
Purely Berries & Oats
Not every lighter breakfast needs eggs.
Purely Berries & Oats is built around creamy steel-cut oats layered with maple vanilla cream, fresh berries and Purely Elizabeth granola.
Steel-cut oats have a different texture from instant or rolled oatmeal because the oat groat is cut into smaller pieces rather than flattened. That produces a firmer, chewier bowl of oatmeal.
Fresh berries and granola add fruit and texture, while the maple vanilla cream makes this more substantial than a plain bowl of oats.
It is also useful for someone who simply does not want an egg-based breakfast. Most breakfast menus lean heavily on eggs, so having an oatmeal option gives the menu another direction entirely.
Protein BLT Bowl
The Protein BLT Bowl is a more substantial Lighter Fare choice.
It combines two scrambled cage-free eggs with bacon and Polidori breakfast sausage crumble. Seared tomato, avocado and pickled red onions are served over baby spinach and carrots dressed with Dijon vinaigrette.
Despite the BLT name, there is no sandwich bread involved. The dish takes some of the familiar ingredients associated with a bacon, lettuce and tomato sandwich and turns them into a breakfast bowl with eggs, sausage and greens.
This is a useful option for someone who wants a savory breakfast with meat and eggs but would rather have greens and vegetables than a traditional combination of hash browns and toast.
Sweet Potato Veggie Smash Up
The Sweet Potato Veggie Smash Up puts vegetables at the center of the plate.
Griddled sweet potato halves are topped with pickled red onions, asparagus, mushrooms, onions and avocado. A poached cage-free egg goes on top, followed by house-made sriracha maple syrup and toasted hemp seeds.
The sweet potato provides the base that hash browns or bread might occupy in another breakfast dish.
It also creates a mix of sweet and savory flavors without turning the dish into a traditional sweet breakfast such as pancakes or French toast.
For diners looking for a veggie-forward breakfast, this is one of the most direct choices on the Snooze menu.
You Can Make Other Breakfast Choices More Vegetable-Forward
The Lighter Fare section is not the only place to find vegetables on the Snooze menu.
The Garden Harvest Omelet uses three cage-free eggs with asparagus, mushrooms, onions, zucchini and red bell peppers. It is topped with chili-lime avocado and herbed cream cheese and served with dressed greens rather than the standard hash brown and toast combination found with some other omelets.
Snooze also lists several vegetable add-ons that can be used with breakfast dishes, including spinach, mushrooms and onions, tomatoes, red bell peppers, onion and avocado.
That gives diners more flexibility when ordering omelets, scrambles, hashes, breakfast tacos and other dishes.
Plant-Based Add-Ons Add More Flexibility
Snooze also lists tofu and plant-based chorizo among its available add-ons.
Tofu can provide a plant-based protein option, while plant-based chorizo can be added to eggs, burritos, hashes and other breakfast dishes.
The menu also includes Banana Bliss Pancakes, which are vegan. They are made with coconut and almond milks, vanilla and banana and topped with fresh strawberries and blueberries.
A vegan pancake stack is not necessarily what someone means when they ask for "lighter fare," but it is worth separating the two ideas. Plant-based and lighter are not the same thing.
A dish can be plant-based and substantial. A lighter breakfast can still include eggs or meat. They describe different qualities of a meal.
Sides Can Change the Size of Breakfast Too
Sometimes ordering lighter is less about finding a special entrée and more about building a smaller breakfast.
Snooze offers individual sides including fruit, hash browns, toast, breakfast meats and a single pancake.
That makes it possible to put together a breakfast that is smaller than one of the full signature plates.
Someone might want eggs with fruit rather than a larger combination of eggs, potatoes, meat and toast. Another person may want a lighter entrée but still add one pancake to the table.
That flexibility can be more useful than treating every breakfast as a fixed combination.
Lighter Does Not Mean the Same Thing for Everyone
There is no single definition of a lighter breakfast.
For one person, it might mean replacing a large stack of pancakes with avocado toast and eggs. For another, it might mean choosing oatmeal instead of an egg breakfast. Someone else may want plenty of protein but prefer vegetables and greens in place of potatoes and toast.
Dietary preferences matter too. An egg-white scramble, a vegan pancake and a vegetable breakfast are three very different meals even though all of them might appeal to someone looking beyond a traditional American breakfast plate.
That is why menu range matters more than attaching one definition to the word "lighter."
Find a Lighter Breakfast at Snooze
Snooze's Lighter Fare menu includes several distinct choices rather than one token alternative. Bravocado Toast combines avocado toast, eggs and greens. The Protein & Veggie Egg White Scramble focuses on egg whites, vegetables, avocado and chicken sausage. Purely Berries & Oats offers a non-egg breakfast built around steel-cut oatmeal and fruit. The Protein BLT Bowl combines eggs and breakfast meats with greens and vegetables, while the Sweet Potato Veggie Smash Up puts sweet potatoes and vegetables at the center of the plate.
Vegetable add-ons, tofu, plant-based chorizo, fruit and other sides provide additional ways to adjust breakfast depending on what you want that morning.
